February 28, 1898: Molly Picon was born.

Molly Picon, Yiddish actress, performed around the world beginning with “Baby Margaret” at age 5, entertained troops in Korea and Japan during World War II, renowned for her somersaults and flips well into her seventies, wrote one-woman show, “Hello, Molly” (1979), and an autobiography, Molly (1980).

Wang Hong, a dynamic individual at 55, who works as an administrative personnel while nurturing a deep passion for travel.

In a society where women nearing retirement age are often labeled as "housewives" or "aunties," Wang Hong challenges stereotypes. She believes in embracing new experiences to enrich life.

Despite a knee injury at 53, Wang Hong refused to be held back. She embarked on a journey to Tibet and has since explored over 40 countries, defying age as a limitation.

Maintaining excellent physical fitness, Wang Hong sees age as just a number. She joined the Nanxiang Town Qipao Team at 47 and now leads as the captain, inspiring others to pursue their passions regardless of age.

For Wang Hong, women shape their destinies. She advocates for pursuing dreams relentlessly, proving age is no barrier to living life to the fullest.

Wang Hong's story speaks volumes to the strength and spirit of women, inspiring others to defy societal norms and embrace life's adventures with passion.

AIR FRYER CAPRESE STUFFED PORTOBELLO MUSHROOM RECIPE

You Will Need:

1 large clove garlic, grated

2 tbsp. extra-virgin olive oil

1/2 tsp. kosher salt

Freshly ground black pepper

4 portobello mushrooms (about 1 lb.), stems removed

4 oz. low-moisture mozzarella, cut into small pieces (about 3/4 c.), divided

8 cherry or grape tomatoes, halved (about 1/2 c.), divided

Torn fresh basil leaves, balsamic glaze, and crushed red pepper flakes, for serving

Directions:

1. In a small bowl, whisk garlic, oil, 1/2 teaspoon salt, and a few grinds of black pepper to combine. Brush mushrooms all over with oil mixture.

2. In an air-fryer basket, arrange 2 mushrooms domed side up. Cook at 400°, turning domed side down halfway through, until tender, 7 to 9 minutes.

3. Carefully remove air-fryer basket. Fill caps with half of cheese and half of tomatoes; season with salt. Continue to cook at 400° until cheese is melted and golden in spots and tomatoes are softened, 2 to 3 minutes more. Transfer to a plate. Repeat with remaining mushrooms, cheese, and tomatoes.

4. Arrange mushrooms on a platter. Top with basil, a drizzle of balsamic glaze, and red pepper flakes.
