September 20, 1946: Judith Baca Was Born

Judith Baca, a Chicana visual artist and muralist and community activist, was born today in 1946. She is the co-founder and artistic director of the Social and Public Art Resource Center (SPARC) in Venice, California. Baca is the director of the mural project that created the Great Wall of Los Angeles, which is the largest communal mural project in the world.

OIL FREE POTATO SALAD

đź‘Ť Live Well Now Approved | Vegan | Oil Free | Low Calorie

You Will Need:

1 lbs gold cubed potatoes

1/2 avocado

1 cup chopped cucumber

1 tbsp spicy brown mustard

1 tsp fresh lemon juice

1/4 cup diced red onion

Handful of chopped dill

1/4 tsp salt (or to taste)

Black pepper (to taste)

Directions:

Step 1: Steaming Potatoes

Add 1 inch of water to a saucepan.

Set up a steamer basket in the saucepan.

Place potatoes in the steamer basket.

Bring water to a boil, then reduce heat, cover, and steam for about 10 minutes or until potatoes are fork-tender.

In a bowl, mash avocado, water, mustard, lemon juice, and salt until well combined.

Adjust flavors as needed.

Allow steamed potatoes to cool for at least 20 minutes (preferably in the fridge).

Gently mix cooled potatoes with the creamy avocado sauce.

Step 2: Marinating and Serving

Refrigerate the potato salad for at least 1 hour to cool and meld flavors.

Serve chilled.

Store leftovers in the fridge for up to 3 days.

Transforming Grief Into Strength: The Inspiring Story of Ernestine Stepherd

Today, I am excited to bring the story of Ernestine Shepherd. I have personally followed Shepherd’s journey for a long time and have drawn inspiration from her daily.

In 1992, her sister, Velvet, passed away from a brain aneurysm. This loss had a profound impact on Ernestine's life, leading her into a deep depression and a sedentary lifestyle.

To overcome her grief and honor her sister's memory, Ernestine decided to make a positive change in her life. At the age of 56, she embarked on a path that most people, including myself, would consider daunting - bodybuilding.

By 71, she had earned the title of the world's oldest competitive female bodybuilder. Her dedication to her passion is awe-inspiring.

However, for me Ernestine Shepherd's incredible journey is not about bodybuilding at all.

It teaches us that losing a loved one doesn’t have to signal the end of our own lives, no matter how hard it may be. Instead, it should motivate us to honor their memory by living our lives to the fullest and taking care of ourselves in the way our departed loved ones would want us to.

I hope this story inspires you to take care of yourself, so that you can be the best version of yourself.
