November 16, 1899: Mary Margaret McBride was born

Mary Margaret McBride, appeared in a radio show as a fictional grandmother on “The Martha Deane Show” from 1934-40, and hosted a radio talk show for 15 years with guests as varied as explorers, literary types, ministers, and florists, remembered for her tag line, “It’s one o’clock and here is Mary Margaret McBride”.

Pamela Winn's release from prison in 2013 marked a pivotal moment in her life. Serving time for bank fraud, she grappled with the profound loss of time: time for herself, for career development, and most significantly, time with her family.

You can always make money back,” she has said, “but you can’t get your time back.

Determined not to waste the time ahead, Winn, in her mid-40s, founded RestoreHer. This nonprofit organization champions the cause of incarcerated women, especially those who might be pregnant during their confinement.

Winn's personal experience during her pregnancy, when she suffered a miscarriage due to being shackled, led her to advocate against this practice. Her relentless efforts have successfully led to the implementation of anti-shackling legislation in 15 states, ensuring the safety and rights of pregnant women in similar circumstances.

As an editor for Live Well Now, every day I look and search fro stories about women who inspire and change the world and themselves after 40. This particular story is unique to my heart, as I can not even imagine how much mental strength would one need to overcome time in confinement and come out of it with a desire to help others.

CHICKEN WITH FRIED CAULIFLOWER RICE

You Will Need:

1 tbsp. plus 2 teaspoons grapeseed oil

1 lb. boneless, skinless chicken breast, pounded to even thickness

4 large eggs, beaten

2 red peppers, finely chopped

2 small carrots, finely chopped

1 small onion, finely chopped

2 cloves garlic, finely chopped

4 scallions, finely chopped, plus more for serving

1 c. frozen peas, thawed

4 c. cauliflower "rice"

2 tbsp. low-sodium soy sauce

2 tsp. rice vinegar

Kosher salt and pepper

Directions:

1. Heat a large, deep skillet over medium-high heat. Add 1 tablespoon oil, then chicken and cook until golden brown, 3 to 4 minutes per side; transfer to a cutting board and let rest for 6 minutes before slicing.

2. Add 2 teaspoons oil to skillet, then eggs, and scramble until just set, 1 to 2 minutes; transfer to a bowl.

3. Add red pepper, carrot, and onion and cook, stirring often until just tender, 4 to 5 minutes. Stir in garlic and cook, 1 minute. Toss with scallions and peas.

4. Add cauliflower, soy sauce, and rice vinegar and toss to combine. Then let the cauliflower sit, without stirring, until beginning to brown 2 to 3 minutes. Toss with sliced chicken and eggs.
