TANGY CHICKEN SALAD WITH GRAPES

You Will Need:

5 cups cut chicken breast

½ cup canola mayonnaise

½ cup plain low-fat or non-fat Greek yogurt

1 tbsp fresh lemon juice

2 tsp Dijon mustard

½ tsp black pepper

½ cup diced celery

1 cup halved or whole red seedless grapes

ÂĽ cup sliced scallions

1 head lettuce

Directions:

Combine mayonnaise, yogurt, lemon juice, Dijon mustard, and black pepper in a spacious bowl. Mix until well blended.

Add chicken, celery, grapes, and 3 tablespoons of scallions to the mixture, tossing everything together.

Serve the salad on crisp butter lettuce leaves and garnish with the remaining scallions.

🪂 Taking the Leap at 103: A Remarkable Parachute Jump

Rut Linnéa Ingegärd Larsson (Sweden) was 103 years old when she embarked on an amazing goal of becoming the word’s oldest parachutist.

During the jump, Rut wanted to listen to Lasse Dahlquist’s song "Try Your Wings".

The Best Part? Rut's passion for the sky came later in life, as she discovered parachuting and skydiving right before she turned 90. On her 90th birthday, she tried paragliding for the first time.

Born shortly after the World War II, she spent her childhood in the tranquil countryside near Mjölby, where she continues to reside today, surrounded by her loving family: five children, 19 grandchildren, and approximately 30 great-grandchildren.

I must confess, though, I have a profound fear of parachutes and wouldn't dare attempt it, regardless of my age. However, this story remains one of my most cherished sources of inspiration. Just envision the prospect of embracing a new passion at the ripe age of 90! That's the aspect I find most endearing.
