Susan Wright's Eco Adventure: From Childhood Dreams to Entrepreneurship

Earlier this year, Susan's life took a serendipitous turn when she stumbled upon a shop for sale during her commute to work. Memories of childhood play flooded her mind, igniting a spark within her. With a background in retail and business development, Susan felt drawn to the shop's ethos, which aligned with her values of sustainability and ethical living.

Determined to turn her dream into reality, Susan embarked on a journey of research, planning, and courage. At the age of 58, she made the bold decision to take a leap of faith and become her boss. With £15,000 in savings and a business loan of £20,000, she purchased Eco Republic and opened its doors in June.

Now, with one part-time staff member by her side, Susan dedicates herself to the shop five days a week, pouring her heart into every aspect of the business. Despite the challenges and uncertainties, Susan's passion and determination drive her forward. She is not only hopeful for the future but excited to see her dream evolve and thrive.

In a world where retirement may seem imminent for some, Susan proves that age is just a number. With enthusiasm and determination, she embraces each day with excitement and purpose, proving that it's never too late to chase your dreams.

AIR FRYER MOROCCAN-SPICED CARROTS

You Will Need:

1 lb. medium carrots, peeled, trimmed, and cut ½"-thick on the bias

1 tbsp. extra-virgin olive oil

1/2 tsp. ground cinnamon

1/2 tsp. ground coriander

1/2 tsp. ground cumin

1/2 tsp. kosher salt

1/2 tsp. smoked paprika

2 tbsp. fresh orange juice

2 tsp. fresh lemon juice

1/4 c. pomegranate seeds

2 tbsp. chopped toasted almonds

Torn fresh mint leaves, for serving

Directions:

1. In a medium bowl, toss carrots, oil, cinnamon, coriander, cumin, salt, and paprika. Scrape into an air-fryer basket; reserve bowl. Cook at 370° until carrots are just tender, about 13 minutes.

2. In reserved bowl, combine orange juice and lemon juice. Add hot carrots and toss to coat. Top with pomegranate seeds, almonds, and mint.
