On This Day In Women’s History:

November 2, 1936: Rose Elizabeth Bird was born.

Rose Elizabeth Bird, attorney, the first woman in California to hold a cabinet position (Secretary of Agriculture), allowed workers to unionize, was appointed Chief Justice of the California Supreme Court in 1977, and was defeated in 1987 by conservatives because she opposed the death penalty.

🎤 Susan Boyle: A Late Bloomer's Resounding Success

In April 2009, Susan Boyle, at the age of 48, took the stage on "Britain's Got Talent." The initial response from the audience and judges was one of skepticism, as they considered her to be old, timid, and frumpy. But when Susan began to sing "I Dreamed a Dream" from Les Misérables, her beautiful voice stunned everyone, and Amanda Holden remarked that it was a "wake-up call."

Despite finishing in second place on the show, Susan's performance led to a series of extraordinary achievements:

In November 2009, she released her debut album, "I Dreamed A Dream," which became the year's best-seller in the UK within six weeks. She even earned a place in the Guinness Book of World Records as the oldest person in the UK to reach No. 1 with a debut album.

In May 2010, Time magazine named her the seventh most influential person in the world, outranking even President Obama.

In September 2010, Susan performed for Pope Benedict during his British tour.

In November 2010, her second album, "The Gift," topped both the UK and US charts, a feat achieved only by The Beatles and The Monkees.

Susan's journey wasn't an overnight success. She worked hard, took voice lessons for six years, and sent demo tapes to various talent shows and record companies.

Rejections and setbacks were frequent, but she persevered.

Caring for her ailing mother, Bridget, became her priority. After Bridget's passing in 2007, Susan honored her memory by auditioning for "Britain's Got Talent." Susan's powerful performance marked the first time she sang since her mother's death.

Susan Boyle's remarkable story serves as a reminder that dreams can be deferred but never truly lost. With talent, determination, and the belief of even one person, success knows no age limit.

BREAKFAST EGG MUFFINS TO TRY

You Will Need:

12 eggs

1/2 cup milk

1 tsp salt

1/2 tsp pepper

1 lb cooked bacon, chopped

2 cups cheddar cheese, shredded

2 jalapeños, seeded and diced

fresh cilantro, optional

Directions:

1. Preheat oven to 350°F.

2. In a large mixing bowl, whisk together eggs, milk, salt and pepper and pour into Oxo’s precision batter dispenser.

3. Grease a 12 cup muffin tin. Evenly disperse half of the bacon, cheese and jalapeños into cups. Pour egg mixture into the cups, filling ½ full. Top with remaining ingredients (evenly dispersed among the 12 cups).

4. Bake on center rack for 20-25 minutes. Top with fresh cilantro and serve!
