November 28, 1903: Alice Cook was born.

Alice Cook, labor educator, tried several systems to increase union representation of textile workers and the CIO, taught and researched at Cornell University from 1952–72, and established Cornell’s Department of Women’s Studies.

Eleni Cico embarked on a transformative career journey that led her from beauty therapy to holistic wellness, guided by her passion for natural medicine and determination to balance work, family, and personal growth.

Her career shift began in her 40s when, amidst managing life with two young children, she decided to prioritize motherhood and took voluntary redundancy from her role to become a stay-at-home mom. Yet she soon recognized her desire to explore a new path.

Intrigued by natural medicine and seeking less invasive alternatives to enhance skin health, Eleni found herself drawn to naturopathy. It was a calling that harmonized with her existing skills and piqued her interest. Embracing the flexibility of online and face-to-face learning, she enrolled in a Bachelor of Health Science in Naturopathy, a decision that aligned with her commitment to balance studies with her family responsibilities.

Over 4.5 years of part-time study while caring for her children, Eleni navigated the challenges of family, work, and education. Her perseverance paid off, and as her children entered primary school, she established her own Holistic Skin & Wellness business. Here, she blends her expertise in holistic skin therapy with ongoing studies in naturopathy, creating a comprehensive approach to wellness.

Reflecting on her journey, Eleni acknowledges the hurdles but cherishes every step. The pursuit of her passion has been immensely fulfilling, reiterating her belief that there is never an ideal moment to follow one's dreams.

Her advice to those contemplating a career change and returning to study echoes her own experience: seize the opportunity and dive into your aspirations fearlessly.

MINI ZUCCHINI SNACK PIZZAS

đź‘Ť Live Well Now Approved | Low Calorie | Snack

You Will Need:

1 large zucchini (about 11 ounces), cut diagonally into 1/4-inch slices

1/8 teaspoon salt

1/8 teaspoon pepper

1/3 cup pizza sauce

3/4 cup shredded part-skim mozzarella cheese

1/2 cup miniature pepperoni slices

Minced fresh basil

Directions:

1. Preheat broiler. Arrange zucchini in a single layer on a greased baking sheet. Broil 3-4 in. from heat just until crisp-tender, 1-2 minutes per side.

2. Sprinkle zucchini with salt and pepper; top with sauce, cheese and pepperoni. Broil until cheese is melted, about 1 minute. Sprinkle with basil.

Cook Time: 20mins | Servings: 4
