October 4, 1908: Eleanor Flexner was born.

Eleanor Flexner, influential author and historian, wrote Century of Struggle: The Women’s Rights Movement in the United States (1950) and Mary Wollstonecraft: A Biography (1972).

Ida Keeling, a true testament to the resilience of the human spirit, shattered stereotypes about age and athleticism.

Born in 1915, this remarkable woman didn't start sprinting until the age of 67, proving that it's never too late to pursue your passion and break records.

Keeling's journey began as a way to cope with the loss of her sons to drug-related violence. Running provided her with solace and a newfound purpose. She participated in her first race at the age of 67, and her life was forever changed.

At 95, Keeling set a world record for the 60-meter dash in her age group, an incredible feat that showcased her determination and indomitable spirit. Her story serves as a reminder that age is just a number and that pursuing one's dreams knows no boundaries.

Ida Keeling's remarkable achievements continue to inspire people of all ages even after her passing in 2021. Her legacy serves as a shining example of the boundless potential that exists within each of us, regardless of the years that have passed.

LAYERED VEGGIE TORTELLINI SALAD TO TRY

You Will Need:

1 package (16 ounces) frozen cheese tortellini

2 cups fresh broccoli florets

2 cups cherry tomatoes, quartered

2 celery ribs, finely chopped

1 can (2-1/4 ounces) sliced ripe olives, drained

1 cup shredded cheddar cheese

Parmesan dressing:

3/4 cup mayonnaise

3 tablespoons grated Parmesan cheese

2 tablespoons lemon juice

2 tablespoons heavy whipping cream

1 teaspoon dried thyme

Directions:

1. Cook tortellini according to package directions; drain and rinse in cold water. In a 2-1/2-qt. glass bowl, layer the tortellini, broccoli, tomatoes, celery, olives and cheddar cheese.

2. In a small bowl, whisk the dressing ingredients; spoon over salad or serve alongside. Cover and refrigerate until serving.
