Katharine Anthony, an American biographer best known for The Lambs (1945), a controversial study of the British writers Charles and Mary Lamb. The greater portion of her work examined the lives of notable American women.

Rosie Pratt's career journey embodies a remarkable transition from a successful city lawyer to a passionate veterinary nurse, showcasing resilience and pursuit of lifelong dreams.

With 26 years dedicated to the legal profession, Rosie had risen to a partnership with a city law firm before a personal turning point. After relocating to the countryside following her divorce, Rosie embarked on a significant career pivot on her 50th birthday, deciding to follow her long-held aspiration of working with animals.

With determination and the support of connections in the veterinary field, Rosie trained for two years to become a veterinary nurse. Embracing the challenges of being older than her peers in the classroom, she thrived, even topping the nursing exams nationwide. The transition to a more hands-on and practical profession brought her immense satisfaction, allowing her to delve into the intricacies of animal physiology, a stark contrast to the legal world she had left behind.

Despite the change in status from a senior lawyer to a more junior role, Rosie embraced the new dynamic with enthusiasm. Her maturity and life experience were assets, offering her a unique perspective and earning her respect among her peers. AIR FRYER MOROCCAN-SPICED CARROTS

👍 Live Well Now Approved | Low Calorie

You Will Need:

1 lb. medium carrots, peeled, trimmed, and cut ½"-thick on the bias

1 tbsp. extra-virgin olive oil

1/2 tsp. ground cinnamon

1/2 tsp. ground coriander

1/2 tsp. ground cumin

1/2 tsp. kosher salt

1/2 tsp. smoked paprika

2 tbsp. fresh orange juice

2 tsp. fresh lemon juice

1/4 c. pomegranate seeds

2 tbsp. chopped toasted almonds

Torn fresh mint leaves, for serving

Directions:

1. In a medium bowl, toss carrots, oil, cinnamon, coriander, cumin, salt, and paprika. Scrape into an air-fryer basket; reserve bowl. Cook at 370° until carrots are just tender, about 13 minutes.

2. In reserved bowl, combine orange juice and lemon juice. Add hot carrots and toss to coat. Top with pomegranate seeds, almonds, and mint.
