October 11, 1884: Eleanor Roosevelt was born.

Eleanor Roosevelt was a civil rights advocate, feminist, author, world diplomat, and former First Lady (1933-45).

Byron Katie: A Remarkable Transformation at 43

Byron Kathleen Mitchell, known as Byron Katie, is a renowned motivational speaker and author famous for her groundbreaking self-help method, "The Work."

Her story is remarkable because of the incredible transformation she underwent at the age of 43, which continues to inspire people worldwide.

Born in 1942 in Texas, Byron Katie faced numerous challenges in her early adulthood, including depression, agoraphobia, addiction, and even homelessness.

However, at the age of 43 in 1986, Byron Katie had a profound awakening. During this moment, she discovered the power of questioning her own thoughts and beliefs, realizing that much of her suffering came from unexamined thoughts.

She developed "The Work", a method comprising four transformative questions to challenge stressful thoughts:

Is it true?

Can you absolutely know that it's true?

How do you react when you believe that thought?

Who would you be without that thought?

What makes Byron Katie's story even more inspiring is that she embarked on this transformative journey at the age of 43, demonstrating that profound change and personal growth can happen at any stage in life.

CHICKEN AND SNAP PEA STIR FRY

You Will Need:

2 tablespoons vegetable oil

1 bunch scallions, thinly sliced

2 garlic cloves, minced

1 red bell pepper, thinly sliced

2½ cups snap peas

1¼ cups boneless skinless chicken breast, thinly sliced

Salt and freshly ground black pepper

3 tablespoons soy sauce or tamari

2 tablespoons rice vinegar

2 teaspoons Sriracha (optional)

2 tablespoons sesame seeds, plus more for finishing

3 tablespoons chopped fresh cilantro, plus more for finishing

Directions:

1. In a large sauté pan, heat the oil over medium heat. Add the scallions and garlic, and sauté until fragrant, about 1 minute. Add the bell pepper and snap peas, and sauté until just tender, 2 to 3 minutes.

2. Add the chicken and cook until it is golden and fully cooked and the vegetables are tender, 4 to 5 minutes.

3. Add the soy sauce, rice vinegar, Sriracha (if using) and sesame seeds; toss well to combine. Allow the mixture to simmer for 1 to 2 minutes.

4. Stir in the cilantro, then garnish with a sprinkle of extra cilantro and sesame seeds. Serve immediately.
