At 51, Tessa Gordon boasts an impressive resume as a former Olympian and World Championship Medalist in Tae Kwon Do. Now, as the founder of Pure Energy Martial Arts, she channels her passion for athleticism into teaching a diverse range of students, from toddlers to adults.

Gordon believes age is merely a number and embraces her role as both a mentor and instructor, imparting lessons of respect, discipline, and self-confidence to her students. She finds joy in sharing her love for martial arts while staying physically active, proving that age is no barrier to pursuing one's passions and making a meaningful impact.

CUCUMBER SALAD WITH HONEYDEW MELON & BURRATA RECIPE

You Will Need:

3 tablespoons lemon juice

2 tablespoons extra-virgin olive oil

1 ½ teaspoons honey

¼ teaspoon salt

¼ teaspoon ground pepper

¼ cup chopped fresh basil

4 cups lightly packed baby arugula

4 cups cubed honeydew melon

1 ½ cups cucumber batons (2-inch)

1 burrata ball (3 3/4 ounces), sliced

¼ cup toasted pepitas

Directions:

Whisk lemon juice, oil, honey, salt and pepper in a small bowl. Stir in basil.
