April 3, 1898: Katherine Esau was born.

Katherine Esau, botanist, emigrated from Germany in 1918, settled in California in 1922, studied viruses in celery, pears and carrots with use of electron microscope until 1991, wrote classic 735-page “Plant Anatomy” (1953).

At 63, Mary Tennyson found herself facing a new reality when her mother suffered a life-altering fall, breaking her hip, it changed their lives forever. For her mother, it meant relying on a walker, challenging her independence and fashion sense. Determined to find a solution, Tennyson, from Newport Beach, Calif., set out to create a stylish bag that could attach to her mother's walker.

Unable to find suitable store options, Tennyson crafted a bag herself, drawing praise from friends and industry contacts. Encouraged by their feedback, she launched the StashAll line. Despite challenges, with guidance from resources like SCORE, the bags, priced at $50 to $70, offer both functionality and style.

Manufactured locally in Orange County, Calif., Tennyson ensures quality control throughout production. Her story highlights the power of innovation driven by personal challenges and the importance of perseverance in finding solutions. Through her journey, Tennyson not only improved her mother's life but also created a product with the potential to help many others facing similar struggles.

AIR FRYER SCOTCH EGGS

You Will Need:

Dipping Sauce:

3 tablespoons Greek yogurt

2 tablespoons mango chutney (such as Patak's®)

1 tablespoon mayonnaise

â…› teaspoon salt

â…› teaspoon pepper

â…› teaspoon curry powder

â…› teaspoon cayenne pepper (Optional)

Scotch Eggs:

1 pound pork sausage (such as Jimmy Dean®)

6 eggs, hard-boiled and shelled

â…“ cup flour

2 eggs, lightly beaten

1 cup panko bread crumbs

cooking spray

Directions:

1. Make the dipping sauce: Combine yogurt, chutney, mayonnaise, salt, pepper, curry powder, and cayenne in a small bowl. Refrigerate until ready to use.

2. Make the Scotch eggs: Divide pork sausage into 6 even portions. Flatten each portion into a thin patty. Place 1 hard-boiled egg in the middle of each patty and wrap sausage around eggs, sealing all sides. Set aside.

3. Preheat the air fryer to 390 degrees F (200 degrees C).

4. Place flour in a small bowl, beaten eggs in another small bowl, and panko on a plate. Dip each sausage-wrapped egg into flour, then dip into beaten egg, letting the excess drip off. Roll in panko and place on a plate.

5. Spray the air fryer basket with cooking spray. Arrange eggs in the basket in a single layer without overcrowding; cook in batches if necessary. Cook in the preheated air fryer for 12 minutes, turning eggs over halfway through. Repeat with remaining eggs.
