🏊‍♀️ Pat Gallant-Charette: Making Waves at 71
Pat Gallant-Charette is a retired nurse from Maine, who has redefined the boundaries of marathon swimming.
What sets Pat apart is her extraordinary achievements in her later years. She started her Solo Swims at the age of 59.
In 2019, at the age of 68, she achieved the remarkable honor of being inducted into the International Marathon Swimming Hall of Fame. Her swimming legacy includes conquering some of the world's most challenging open-water channels, from the Catalina Channel to the English Channel.
Recently, at the age of 71, Pat made history by becoming the oldest woman to swim the entire length of the Sea of Galilee in Israel.
Through my work with Live Well Now Newsletter, I have uncovered so many amazing women, that I would have not know about otherwise. It's truly astonishing to realize that our world is brimming with inspirational women who are shaping history well into their 40s, 50s, and beyond. Spreading their stories is crucial to inspire women worldwide

AIR-FRIED PAPRIKA GARLIC CHICKEN

You Will Need:
Brine Chicken:
4 boneless skinless chicken breasts
ÂĽ cup sea salt
4 cups water
Seasoning:
2 tbsp olive oil
1 tsp garlic powder
1 tsp sea salt
½ tsp paprika
ÂĽ tsp black pepper
Directions:
1. Optional (but recommended): Prepare a brine by mixing salt with water in a large bowl. Submerge chicken breasts and let sit for 10 minutes at room temperature or up to a day in the fridge.
2. Rinse and pat dry the chicken breasts, whether you brined them or not.
3. Brush both sides of the chicken with olive oil, then season with garlic powder, sea salt, paprika, and black pepper.
4. Arrange the chicken in a single layer in the air fryer basket (you may need to do this in batches if they don't fit without crowding).
5. Air fry at 400°F (204°C) until the internal temperature reaches 163-165°F (73-74°C). This takes approximately 7-10 minutes for small chicken breasts, 10-12 minutes for medium, or 12-16 minutes for large.
6. Remove the chicken from the air fryer and cover it with foil. Let it rest for 5 minutes before serving or slicin
