On This Day In Women’s History:

April 8, 1892: Bessie Smith was born.

Bessie Smith, began career about 1902, learned country blues from Gertrude “Ma” Rainey, made 160 recordings, billed as the “Empress of the Blues,” career declined by 1931 amidst economic depression and the advent of radio.

Antarctic Odyssey: Susan MacGregor's Unforgettable Journey

In 1969, Susan made the courageous decision to prioritize love over college, marrying her sweetheart Jim. But life threw them a curveball when Jim was drafted, and their financial situation became precarious. Undeterred, Susan took on a variety of unconventional jobs, from selling cemetery plots to apprenticing as a meat cutter, all while pursuing her education.

Despite facing skepticism and challenges along the way, Susan remained steadfast in her pursuit of knowledge. Her unwavering determination led her to earn a Ph.D. in bioinorganic chemistry, opening doors to unimaginable opportunities.

Susan's adventures didn't stop there. At 54, she set out on a thrilling expedition to Antarctica with the U.S. Polar Program. Then, at the age of 62, she made history by spending a nine-month winter at the South Pole, becoming the oldest female to ever overwinter at this remote outpost. Her story serves as a reminder that with perseverance and commitment, no dream is too big to achieve.

CREAM OF ASPARAGUS SOUP RECIPE

You Will Need:

1 pound fresh asparagus, trimmed and cut into 1-inch pieces

1 (14.5 ounce) can chicken broth, divided

½ cup chopped onion

2 tablespoons butter

2 tablespoons all-purpose flour

1 teaspoon salt, or to taste

1 pinch ground black pepper

1 cup milk

½ cup sour cream

1 teaspoon fresh lemon juice

Directions:

1.Combine asparagus, 1/2 cup chicken broth, and onion in a large saucepan; cover and bring to a boil over high heat. Reduce heat to medium-low and simmer, uncovered, until asparagus is tender, about 12 minutes. Transfer the mixture to a blender; puree until smooth and set aside.

2. In the same saucepan, melt butter over medium-low heat. Stir in flour, salt, and pepper; cook, stirring constantly, for 2 minutes.

3. Place sour cream in a small bowl and stir in a ladleful of hot soup until blended; pour into the soup and stir in lemon juice. Warm soup through to serving temperature, without boiling. Serve immediately.
