January 16, 1932:Dian Fossey was born.

Dian Fossey, primatologist and naturalist who studied, lived amongst, and befriended the gorillas of Rwanda for 18 years, wrote Gorillas in the Mist (1983) emphasizing the need to protect them from the constant threat of poachers and neglect.

Leigh Wilson Trades Corporate Life for a Nomadic Adventure at 42

Leigh Wilson, a 20-year corporate veteran from Chicago, made a courageous decision to break free from the traditional career path. After a transformative trip to Southeast Asia in 2016, she felt a profound desire to travel more deeply and embrace a nomadic lifestyle. Despite the fear and uncertainty, Leigh decided to leave her corporate career behind and launched the website "Campfires & Concierges."

Alongside her loyal canine companion, she embarked on a six-month, 10,000-mile road trip through the American Southwest and Baja Mexico. To turn this dream into reality, Leigh downsized her life, selling her home and cutting back on expenses. Her story illustrates that it's never too late to pursue a different, more fulfilling path, and sometimes, trading corporate life for a nomadic adventure can lead to unexpected joy and fulfillment.

You Will Need:

2/3 c. frozen peaches

1/2 c. chopped summer squash

1/4 c. coconut water

Cara Cara orange pieces, pepitas, and toasted coconut chips, for serving

Directions:

In a blender, puree peaches, squash, and coconut water until smooth. Transfer to a bowl and top with oranges, pepitas, and coconut if desired.
