December 21, 1959: Florence Griffith Joyner was born.

Florence Griffith Joyner (“Flo-Jo”), Olympic track and field champion, won 3 gold medals and 1 silver at 1988 Summer games, called “World’s Fastest Woman”.

🚲 Kittie Weston-Knauer: Defying BMX Boundaries at 75

At 75 years old, Kittie Weston-Knauer stands as the oldest female BMX racer in the nation. Her journey into BMX began at 39 when she was captivated by the sport after offering her son some unsolicited advice about cycling.

Upon delving into the sport, Weston-Knauer encountered a dearth of cruiser classes for women in her forties. Undeterred, she ventured into competitions alongside men, discovering both pleasure and triumph in her newfound passion. Despite enduring knee and hip replacements, she continues to ride passionately.

Recently, Weston-Knauer embarked on a mission to Texas, advocating for fellow black women to embrace BMX racing. Her dedication to the sport remains unwavering, inspiring all and proving that age and obstacles are no impediments to pursuing one's passions.

PAN ROASTED CARROTS TO TRY

đź‘Ť Live Well Now Approved | Low Calorie

You Will Need:

1 pound medium carrots

2 tablespoons extra-virgin olive oil

1 ½ teaspoons unsalted butter

2 tablespoons water

1 tablespoon hoisin sauce

1 ½ teaspoons pure maple syrup

ÂĽ teaspoon kosher salt

Directions:

Cut carrots in half lengthwise. Heat a large cast-iron skillet over medium-high heat. Add oil and butter; swirl to coat. Add the carrots in a single layer; cook without stirring for 5 minutes. Stir and arrange in a single layer; cook without stirring for 5 more minutes. Combine water, hoisin, maple syrup and salt; add to the pan and cook until the carrots are glazed, about 1 minute.
