Kelsey Barrie: The Charity Challenger with a Passion for Fitness

At 51 years old, Kelsey Barrie, a resident of Sheffield, is not slowing down anytime soon. She's embarking on an extraordinary journey for a noble cause. Kelsey is gearing up to undertake a grueling charity walk from Petra to Jordan, spanning five consecutive days of nine-hour treks daily. Her motivation? Raising funds for a children’s hospital, a cause close to her heart.

But Kelsey's dedication to fitness extends far beyond her charity challenge. Each day begins with a vigorous 10-mile cycle on her Peloton, setting the tone for her active lifestyle. For Kelsey, movement isn't just a routine; it's her medicine.

Recognizing the importance of holistic health, Kelsey prioritizes a balanced diet supplemented with essential nutrients like vitamin C, D3, and magnesium, which are crucial for maintaining joint health. As she emphasizes, healthy joints are indispensable for her active pursuits, underscoring the significance of self-care.

Even on days packed with commitments, Kelsey ensures she incorporates some form of exercise into her routine, whether it's a brisk walk or a stroll amidst nature. SHRIMP AND ASPARAGUS STIR-FRY

You Will Need:

4 tablespoons olive oil, divided

1 lb raw shrimp(455 g), peeled and deveined

1 lb asparagus(455 g), ends trimmed, halved crosswise

1 teaspoon kosher salt, divided

½ teaspoon crushed red pepper flakes

1 teaspoon minced garlic

1 teaspoon minced fresh ginger

1 tablespoon low-sodium soy sauce

2 tablespoons lemon juice

Directions:

1.In a large frying pan, heat 2 tablespoons of olive oil over medium-high heat. Add the shrimp to the pan and season with ½ teaspoon of salt and the crushed red pepper flakes. Cook until the shrimp is pink, 2–3 minutes, then remove the shrimp from the pan and set aside.

2. In the same pan, heat the remaining 2 tablespoons of olive oil. Add the asparagus, garlic, ginger, and remaining ½ teaspoon of salt and cook, tossing frequently, until the asparagus is tender-crisp, 4–5 minutes.

3. Return the shrimp to the pan, then add the soy sauce. Stir until the ingredients are well-combined. Stir in the lemon juice, then remove the pan from the heat.

Serve the stir-fry hot. Enjoy!
