January 24, 1968: Mary Lou Retton was born.

Mary Lou Retton, first and only American woman to win a gold medal in the All-Around in gymnastics at the Olympics (1984) and first American woman to win a gold medal in gymnastics, first woman featured on a Wheaties cereal box.

Katie Couric's Media Empire: Navigating News Evolution

Katie Couric, the seasoned journalist, took a bold step by launching her own media company, Katie Couric Media, at the age of 61. Drawing on her extensive experience in broadcast television spanning more than two decades, Couric aimed to capitalize on the audience she had cultivated over the years.

In 2022, her media empire witnessed impressive growth, with her newsletter boasting over one million members and her website garnering over three million monthly page views. Couric's podcast achieved a remarkable milestone with 20 million downloads.

Couric, a veteran in the field, observed a shift in news consumption back in 2008 during her tenure as the anchor of the CBS Evening News. Taking a proactive approach at 51, she began incorporating Twitter questions into the broadcast, recognizing the evolving landscape of media.

Venturing into digital news, Couric assumed the role of Yahoo's Global News Anchor at 56 in 2013, a position she held until 2017. Her digital endeavors align with her commitment to combat disinformation, a cause she passionately champions. In 2016, Couric co-chaired the Aspen Institute's Commission on Disinformation, showcasing her dedication to fostering a trustworthy media environment.

AIR-FRYER APPLES RECIPE

đź‘Ť Live Well Now Approved | Low Calorie

You Will Need:

3 small apples, peeled and cut into 1/2-inch slices

1 tablespoon pure maple syrup

1 teaspoon grated orange zest

1 teaspoon canola oil

1 teaspoon vanilla extract

½ teaspoon ground cinnamon

â…› teaspoon salt

Directions:

1. Preheat air fryer to 375°F for 5 minutes. Lightly coat the fryer basket with cooking spray.

2. Combine apple slices, maple syrup, orange zest, oil, vanilla, cinnamon and salt in a medium bowl; toss well to coat. Working in batches if necessary, spread the apple slices in a single layer in the fryer basket. Cook until the apples are tender and browned at the edges, about 12 minutes.
