Doris Kearns Goodwin, historian, awarded the Pulitzer Prize for Lincoln, also wrote The Fitzgeralds and the Kennedys and Lyndon Johnson.

Kathryn Joosten: A Life of Resilience and Achievement

Kathryn Joosten's life journey took unexpected turns, showcasing resilience and a tenacious spirit. Initially a successful nurse, Joosten altered her path after a divorce at age 42, transitioning from a homemaker to an aspiring actress. Despite having no acting background, she embarked on this new endeavor, driven by the need to support her sons.

During this transition, Joosten worked odd jobs like house painting and became a street performer at Disney World by age 53. Her determination led her to Hollywood, where she secured guest roles on various TV shows. However, it was at the age of 60 that she gained recognition for her role as a secretary in "The West Wing."

Subsequently, at 66, Kathryn Joosten earned her first Emmy Award for her performance in "Desperate Housewives." Her inspiring story underlines the reality that setbacks and challenges often precede success. Joosten's journey teaches us the importance of perseverance; even in the face of adversity, one should persist. Her legacy remains a testament to resilience and determination. Kathryn Joosten passed away at 72, leaving a legacy of unwavering perseverance and an enduring spirit.

AIR-FRYER BLOOMING ONIONS TO TRY

šŸ‘ Live Well Now Approved | Low Calorie

You Will Need:

Cooking spray

2 large (12-ounce) sweet onions

2 large eggs

Ā½ cup low-fat milk

Ā¼ cup whole-wheat flour

1 teaspoon paprika, divided

Ā½ teaspoon garlic powder

Ā½ teaspoon onion powder

Ā½ teaspoon salt, divided

Ā¼ teaspoon cayenne pepper, divided

1 cup panko breadcrumbs

Ā½ cup mayonnaise

2 tablespoons cocktail sauce

Directions:

1. Preheat air fryer to 375Ā°F for 5 minutes. Coat the fryer basket with cooking spray.

2. Trim stem end off onions and peel the onions (leaving roots intact). Place the onions, root-sides down, on a cutting board and cut down through each onion, stopping 1/4 inch above the roots, to create 16 sections.

3. Dip each onion into the batter, allowing excess to drip off, then dredge in the breadcrumbs to coat completely. (Pull the onion "petals" apart often during the dredging process to make sure you are getting batter and breadcrumbs into every nook and cranny.) Place the onions in the prepared basket and coat with cooking spray. Cook until crispy, 20 to 25 minutes. Sprinkle with the remaining 1/4 teaspoon salt.

4. Meanwhile, whisk mayonnaise, cocktail sauce and the remaining 1/2 teaspoon paprika and 1/8 teaspoon cayenne in a small bowl. Serve the onions with the dipping sauce.
