Karen Whitehead Embraces a Fulfilling Career Change

Karen Whitehead, residing in Alpharetta, GA, embarked on a transformative journey, defying norms and societal expectations. As part of the sandwich generation, Karen navigated the complexities of raising kids, caring for her aging mother, and teaching as a third-grade teacher. However, she found herself at a crossroads, grappling with misery, physical health issues, and elevated stress levels.

With unwavering support from her husband and family, Karen transitioned to a role in fundraising and communications at an independent school. It was a subsequent opportunity in an inpatient hospice that sparked her passion for connecting with families and patients. Eager to explore more meaningful career paths, Karen delved into medicine and social services options.

The turning point came at the age of 46 when fueled by a desire for change, Karen enrolled in an online Master's in Social Work program at Boston University. The journey wasn't without challenges; Karen took a leave of absence to care for her ailing mother but emerged stronger, completing the program in three years. Now, at 52, Karen operates her private practice, Karen Whitehead Counseling, where she dedicates herself to helping clients navigate stress, anxiety, cancer, and chronic illness, guiding them toward rediscovering the joy in life. Karen's story exemplifies the courage and resilience it takes to embrace change and find fulfillment in a new career path, proving that it's never too late to pursue one's passion and reinvent oneself.

AIR-FRYER BACON-WRAPPED SCALLOPS

You Will Need:

12 medium sea scallops (about 9 ounces total)

3 thin center-cut bacon slices

¼ teaspoon ground pepper

¼ teaspoon paprika

1 teaspoon extra-virgin olive oil

Directions:

1. Preheat air fryer to 375°F. Pat scallops dry. Remove and discard the muscle from the side of each scallop. Cut bacon slices in half crosswise and then lengthwise to make 12 strips. Wrap 1 bacon strip around each scallop, overlapping the ends slightly. Thread a wooden pick through both ends of the bacon to secure it in place, pushing the pick through the opposite side of the scallop. Sprinkle the scallops evenly with pepper and paprika and brush lightly with oil.

2. Arrange the scallops in an even layer in the fryer basket. Cook until the bacon is beginning to crisp and the scallops are firm but tender, 10 to 12 minutes.
