January 31, 1960: Betty Parsons was born.

Betty Parsons, gallery owner and artist, exhibited watercolors in 1935, created the Betty Parsons Gallery in 1946, showed the work of many avant garde expressionists.

Gloria Steinem: A Lifelong Advocate for Feminism and Equality

Gloria Steinem, an iconic writer and trailblazing activist, has been at the forefront of the feminist movement for several decades, leaving an indelible mark on history.

In recognition of her profound contributions, Steinem was inducted into the Women's Hall of Fame in her 50s, solidifying her status as a pivotal figure in women's rights. Her impact continued to reverberate, and in her 60s, she was honored with the Presidential Medal of Freedom, a testament to the enduring significance of her work.

Steinem's influence extends across a multitude of political movements. She played a crucial role in the establishment of the Coalition of Labor Union Women, Voters for Choice, Women's Action Alliance, the National Women's Political Caucus, and the Women's Media Center. As a seasoned journalist, she co-founded both New York Magazine and Ms. Magazine, where she remains a consulting editor, contributing to the ongoing dialogue around women's issues.

In 2005, Steinem, alongside Jane Fonda and Robin Morgan, co-founded the Women's Media Center, a platform dedicated to amplifying the visibility and influence of women within the media landscape. Steinem's enduring commitment to advancing the cause of women has shaped not only the feminist movement but also the broader narrative of equality and empowerment.

CRISPY AIR-FYER PICKLE CHIPS RECIPE

đź‘Ť Live Well Now Approved | Low Calorie

You Will Need:

½ cup all-purpose flour

2 large eggs, lightly beaten

1 cup panko breadcrumbs

1 (16 ounce) jar reduced-sodium dill pickle chips

ÂĽ cup mayonnaise

1 tablespoon Creole mustard

1 teaspoon lemon juice

½ teaspoon smoked paprika

Directions:

1. Spread flour in a shallow bowl. Place eggs in a second shallow bowl and spread panko in a third bowl. Drain pickle chips and pat them very dry. Dredge the pickles in the flour, shaking off excess. Dip in the egg and then toss in the panko, lightly pressing to adhere. Working in 3 batches, place the pickles in the basket of an air fryer. Cook at 350 degrees F until golden brown, about 6 minutes.

2. Combine mayonnaise, Creole mustard, lemon juice and smoked paprika in a small bowl. Serve the dipping sauce with the pickles.
