THE YUMMIEST BAKED OATMEAL EVER

You Will Need:

1 ripe banana, mashed (Ā½ cup)

1 cup unsweetened almond milk, at room temperature

Ā¼ cup smooth almond butter

Ā¼ cup maple syrup

Ā¼ cup melted coconut oil

1 teaspoon baking powder

1 teaspoon cinnamon

Ā½ teaspoon sea salt

2 cups whole rolled oats

1 cup chopped pecans

1 cup blueberries, fresh or frozen

2 tablespoons brown sugar, for topping

2 tablespoons coconut flakes, for topping

Directions:

1. Preheat the oven to 350Ā°F and grease an 8x8-inch or similar baking dish.

2. In a large bowl, whisk together the mashed banana, almond milk, almond butter, maple syrup, and coconut oil. Add the baking powder, cinnamon, and salt and whisk again.

3. Fold in the oats, Ā¾ cup of the pecans, and Ā½ cup of the blueberries. Pour the mixture into the prepared baking dish and smooth into an even layer.

4. Top with the remaining Ā½ cup blueberries, the remaining Ā¼ cup pecans, the brown sugar, and coconut flakes.

5. Bake for 40 to 50 minutes, or until the topping is crisp and the middle is set. Remove from the oven and let cool for 10 minutes before serving.

Self Care Is Not Selfish: Here Is Why

As women over 40, we often find ourselves juggling multiple roles and responsibilities, from caring for our families to excelling in our careers. It's easy to overlook our own needs in the midst of it all, but here are three important reasons why self-care is far from selfish:

  1. Recharging Your Batteries: Just like a car needs fuel to keep running smoothly, we need self-care to replenish our physical, emotional, and mental energy. Taking time for yourself allows you to be at your best for your loved ones and your endeavors.

  2. Mental and Emotional Well-being: Self-care isn't a luxury; it's a necessity for maintaining our mental and emotional health. Whether it's through meditation, a long bath, or simply reading a good book, taking care of our emotional well-being helps us handle life's challenges with grace and resilience.

  3. Setting a Healthy Example: By prioritizing self-care, we not only benefit ourselves but also set a positive example for those around us, especially younger generations. Showing that it's okay to care for oneself teaches important life lessons about self-worth and balance.

Remember, self-care is a form of self-love, and when we love and care for ourselves, we have more love and care to give to others.

So go ahead, indulge in that spa day, take that solo vacation, or simply spend some quiet moments with a cup of tea.

You deserve it, and it's anything but selfish.
