Ertharin Cousin's Impactful Journey in Global Food Security

At an age when many contemplate retirement, Ertharin Cousin embarked on a mission to eliminate hunger, becoming a driving force in the global effort to make nutritious food accessible to all. Her remarkable journey took a significant turn after the age of 50 when she assumed the roles of U.S. Ambassador for Food Security and executive director of the U.N. World Food Programme.

In a groundbreaking move in 2019, Cousin ventured into entrepreneurship with the launch of Food Systems for the Future. This initiative not only serves as a business accelerator but also houses a nutrition-focused impact investment fund. The core objective is to elevate nutritional outcomes in underserved U.S. and Sub-Saharan African communities by investing in innovative and profitable food and agriculture startups.

Supported by key players such as Walmart, the Eleanor Crook Foundation, Kroger Foundation, Rockefeller Foundation, Tyson, and PepsiCo Foundation, Food Systems for the Future stands as a testament to Cousin's unwavering commitment to fostering sustainable solutions in the battle against hunger. SALMON BITES WITH WASABI MAYO RECIPE

You Will Need:

1 lb salmon (thickest cut, if possible)

2 tbsp brown sugar

4 cloves garlic, minced

1 tbsp ginger, grated

1 tbsp olive oil

1/2 cup Soy sauce

Wasabi Mayo

1/2 cup mayonnaise

1 tbsp wasabi paste

1 tbsp lemon juice

Directions:

1. Carefully remove the skin from the salmon filets * and cut salmon into 2 inch pieces.

2. In a medium sized bowl combine brown sugar, soy sauce, garlic and ginger. Toss salmon pieces in the same bowl along with sauce and allow to marinate for at least 30 minutes (or overnight).

3. In a large skillet heat the oil over med-high heat. Thread the salmon pieces onto metal skewers (or wooden skewers that have been soaked in water for 30 minutes) and place the salmon skewers into the pan. Allow to sear without moving them, about 2 minutes. Flip them over and sear them for two minutes on the other side. This may need to be done in batches depending on the size of your pan.

4. In a small bowl, whisk the mayo, wasabi paste and lemon juice until smooth.

5. Serve the salmon skewers with extra sauce, dipped in the wasabi aioli. If you're looking for a side dish to go with this try our bok choy or perfect broccoli!

*If your salmon came from the seafood section at your local grocery store, have your butcher remove the skin for you before packaging.
