Margaret Dumont was an American stage and film actress. She is best remembered as the comic foil to the Marx Brothers in seven of their films; Groucho Marx called her "practically the fifth Marx brother.

👩‍💼 Eileen McDonnell: A Late-Blooming CEO Who Redefined Success

Meet Eileen, the CEO of a Fortune 1000 company, the insurance firm Penn Mutual.

What made her story motivational and inspiration for me, is that she started her journey to the top in her mid-40s, and her story is even more remarkable as she chose single parenthood by adopting her daughter, Claire, from Russia.

Eileen left her corporate career to focus on motherhood, starting her own consulting business and teaching an online leadership course while caring for her daughter.

Her big break came when she was asked to recommend candidates for the Chief Marketing Officer position at Penn Mutual, which led to her own unexpected career shift. She became the CEO, and her rise through the ranks continued, making her the Chairman in 2013.

I am a believer, that single parenthood in itself is the biggest and hardest accomplishment there is. Eileen’s story inspires and reminds me that we can aim for more than one accomplishment, if we choose to. It is a great example that we can chase our dreams both in our personal and professional lives.

AIR FRYER BAKED POTATO (FLUFFY INSIDE, CRISPY SKIN!)

đź‘Ť Live Well Now Approved | Low Calorie

You Will Need:

4 medium Russet potatoes (washed and dried)

1 â…“ tbsp Olive oil

â…” tsp Sea salt

2 tbsp Butter (for topping)

Directions:

1. Preheat the air fryer to 400 degrees F (204 degrees C) for about 5 minutes.

2. Prick the potatoes all over with a knife or fork.

3. Drizzle the potatoes with oil and rub in, or brush the oil on with a brush. Sprinkle with sea salt.

4. Place the potatoes in the air fryer basket in a single layer. Make sure there is space between them to allow the skins to crisp up nicely.

5. Bake potatoes in the air fryer for 35-45 minutes, turning halfway through with tongs. (Cook time can vary depending on the size of the potatoes.) They are done when a fork pierced into the potatoes goes in easily.

6. When done, move potatoes to bowls and cool slightly. Slice lengthwise down the middle, fluff with a fork, and top each potato with ½ tablespoon of butter. See the post above for more topping ideas.
