September 14, 1830: Emily Edson Briggs Was Born

Emily Edson Briggs was a journalist in Washington, D.C. during the 19th century. She was one of the first American women to become nationally known as a reporter. She became first woman White House correspondent during Lincoln’s administration, the first president of the Women’s National Press Association (1882).

Dr. Bhagawati Oza: The Age-Defying Trailblazer of Learning and Fitness

Dr. Bhagawati Oza is the brand ambassador of the Vadodara Marathon. She is also a recipient of the National Award for Older Persons in Sports and Adventure category and was given the same by the President of India (at that time). She is someone who adds a new hobby to her life every three years.

When she was 40, she took training in mountaineering.

At 50, she got a pilot license and completed 150 hours of flying.

At 75, she embarked on a 186 miles/3,000 km cycling expedition.

Right now at 86 years old, she runs 3 miles/5 kilometres every day and cycles 9 miles/15 kilometres.

Dr. Oza feels it’s never too late to start learning a new skill. Kudos to her grit and determination. She constantly reminds us that there is no barrier for us - women do not disappear after 40, they rule and prosper.

EASY PIZZA SALAD

đź‘Ť Live Well Now Approved

You Will Need:

PIZZA SALAD DRESSING

ÂĽ cup extra virgin olive oil

2 tablespoons red wine vinegar

1 garlic clove

½ teaspoon dried oregano

Âľ teaspoon fine sea salt

ÂĽ teaspoon ground black pepper

1 tablespoon tomato paste (optional, but recommended)

ÂĽ cup grated Parmesan cheese

SALAD INGREDIENTS

4 to 6 cups chopped romaine or spring mix

assorted pizza toppings (cherry tomatoes, black olives, red onion, pepperoni, shredded Parmesan, or any other toppings you love)

Directions:

1. To prepare the salad dressing, add the olive oil, red wine vinegar, garlic, oregano, salt, pepper, tomato paste, Parmesan, and 2 tablespoons of water to a high-speed blender. Secure the lid and blend until the dressing looks creamy, about 60 seconds. Add 1 more tablespoon of water, if needed, to help everything blend smoothly, then set the dressing aside.

To assemble the pizza salad, start with a bed of leafy greens, such as Romaine lettuce or spring mix. Next, add your favorite pizza toppings, like sliced cherry tomatoes, red onions, black olives, pepperoni, and shredded Parmesan cheese. (Any toppings you love will work here.)

2. Drizzle the dressing generously over the salad, and toss well. Then it's ready to eat right away! Leftover dressing can be stored in an airtight container in the fridge for up to 5 days. (It makes a delicious bread dip, too.)
