February 14, 1847: Anna Howard Shaw was born.

Anna Howard Shaw, woman suffrage leader, exceptionally fine orator, licensed as Methodist Protestant minister in 1880, graduated as M.D. in 1886, organizer with Massachusetts Woman Suffrage Association 1888-92, lectured in every state, beloved president of the National American Woman Suffrage Association (1904-15), awarded the Distinguished Service Medal for her work during World War I.

At 52, Sharon Levy, a physical therapist, is realizing her dream of representing the USA in a competitive sporting event. Having qualified to race the Long Course Aquabike for Team USA in November, she gears up for a challenging 1.2-mile open-water swim followed by a 56-mile bike race in Denmark this July.

Levy's journey is more than just about personal achievement; it's about breaking stereotypes and inspiring women of all ages to embrace physical activity and pursue their passions fearlessly. Through dedicated training and unwavering determination, she exemplifies that age is no barrier to pushing oneself and exploring new sports.

She competes with athletes from all over the world, Levy proudly embraces her age, demonstrating that determination and perseverance know no bounds. Her journey serves as a guiding light for women everywhere, proving that it's never too late to chase your dreams and strive for excellence in sports.

AIR-FRYER STUFFED ACORN SQUASH RECIPE

šŸ‘ Live Well Now Approved

You Will Need:

2 tablespoons extra-virgin olive oil, divided

2 acorn squash, halved and seeded

2 medium carrots, chopped

2 stalks celery, chopped

1 cup sliced button mushrooms

Ā¼ cup minced shallots

1 teaspoon dried thyme

Ā½ teaspoon ground pepper, plus more for garnish

Ā¼ teaspoon salt

1 (8.8 ounce) pouch cooked long grain and wild rice mix

Ā¼ cup chopped pecans, toasted (see Tip)

Ā¼ cup dried cranberries

Snipped fresh thyme for garnish

Directions:

1. Preheat air fryer to 400ā„‰. Drizzle 1 tablespoon oil evenly over cut sides of squash. Arrange the squash in the air-fryer basket. Cook until fork-tender, 20 to 25 minutes.

2. Meanwhile, heat the remaining 1 tablespoon oil in a large skillet over medium heat. Add carrots, celery, mushrooms, shallots, thyme, pepper and salt. Cook, stirring occasionally, until the vegetables are tender, about 10 minutes.

3. Transfer the vegetables to a bowl. Stir in prepared rice, pecans and dried cranberries. Spoon the rice mixture into the squash halves. Garnish with fresh thyme and additional pepper, if desired.
