🪂 Defying Gravity and Age: Dorothy Hoffner's Skydiving Triumph at 104
Dorothy Hoffner, a 104-year-old Chicago resident, is vying to secure a place in the Guinness World Records as the oldest skydiver. She made a tandem jump at Skydive Chicago, defying her age and leaving her walker behind.
"Age is just a number," Hoffner declared, unfazed, upon landing at Skydive Chicago in Ottawa, Illinois, approximately 85 miles southwest of Chicago.
The current record for the oldest skydiver stands at 103 years old, set by Linnéa Ingegärd Larsson from Sweden in May 2022. However, Skydive Chicago is diligently working to have Hoffner's jump officially recognized as a new record.
Hoffner's skydiving journey began at the age of 100. On this recent adventure, she showed incredible determination by leaving her walker behind, climbing the steps to the plane, and taking the leap. With her instructor by her side, Hoffner boldly led the jump from 13,500 feet.
Her seven-minute dive, complete with a graceful landing, was met with cheers and applause. Upon touching down, Hoffner reflected on the experience, expressing her delight and the wonderful feeling of being up in the sky.
Dorothy Hoffner, who recently left us, will forever be remembered for her fearless spirit and unyielding determination. Her remarkable skydiving accomplishment serves as a lasting reminder that our age should never limit the pursuit of our dreams. In her honor, we celebrate the legacy of a woman who defied convention and proved that life's most extraordinary moments are not bound by the constraints of time.

THE BEST APPLE WALNUT SALAD

You Will Need:
BALSAMIC DRESSING
1/4 cup extra-virgin olive oil
2 tablespoons balsamic vinegar (see note)
2 tablespoons honey
1 teaspoon spicy brown mustard
ÂĽ teaspoon fine sea salt
SALAD
6 cups mixed greens
1 medium apple , thinly sliced
¼ red onion , thinly sliced (about ½ cup)
½ cup raw walnuts , roughly chopped
ÂĽ cup feta cheese , crumbled (optional)
Directions:
1. To prepare the balsamic vinaigrette, add the olive oil, vinegar, honey, mustard, and salt to a small bowl. Whisk well, until the dressing looks thicker, then set it aside.
2. To assemble the salad, add the mixed greens to a large serving plate and top it with the sliced apples and red onion. Then sprinkle on the walnuts and feta, if using.
3. Drizzle the dressing over the salad just before serving. You might not use all of the dressing right away, but I like to serve the extra on the side in case guests would like to add more. Leftover dressing can be stored in an airtight container in the fridge for up to 5 days. It will thicken when chilled, so run the jar under warm running tap water to thin it out again.
