Deb Haaland: Pioneering Paths in Public Service

Deb Haaland's life has been marked by incredible resilience and groundbreaking achievements.

At 55, she made history as the chair of the Democratic Party of New Mexico, a significant milestone for a single mom who had faced homelessness and graduated from college at the age of 34.

Her journey took another historic turn at 57 when she was elected to the U.S. House of Representatives.

Now at 62, Haaland serves as the U.S. Secretary of the Interior in the Biden cabinet, further cementing her place in history as the first Native American to hold a cabinet secretary position. Her transformative path, overcoming unfortunate fate, and consistently breaking barriers reflect a remarkable story of determination and leadership.

BACON-WRAPPED SCALLOPS TO TRY

đź‘Ť Live Well Now Approved | Low Carb

You Will Need:

1 lb. dry sea scallops (about 14)

Kosher salt

Freshly ground black pepper

8 oz. bacon (about 7 strips, not thick-cut)

2 tbsp. unsalted butter

1 clove garlic, smashed

1 tbsp. fresh thyme leaves

Lemon wedges, for serving

Directions:

1. Preheat oven to 425°. Line a rimmed baking sheet with foil.

2. Pat scallops dry with paper towels; season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Cut bacon slices in half crosswise so you get 3"- to 4"-long strips. Wrap bacon around scallops and secure with a toothpick. Arrange scallops on prepared sheet.

3. In a small skillet over medium heat, melt butter. Add garlic and thyme leaves and cook, stirring, until fragrant, about 1 minute. Spoon butter and thyme over scallops, leaving garlic in pan.

4. Roast scallops until bacon is crisp and scallops are cooked through, 15 to 20 minutes.

5. Remove toothpicks. Transfer scallops to a platter and serve warm with lemon wedges alongside.
