Mahalia Jackson was an American gospel singer, widely considered one of the most influential vocalists of the 20th century. With a career spanning 40 years, Jackson was integral to the development and spread of gospel blues in black churches throughout the U.S.

Starting a bakery business at the age of 43 may seem like an unconventional move, especially for a single mother who has been successfully running three McDonald's franchises.

Cordia Harrington's decision to venture into the world of baking was met with apprehension from her accountant and lawyer. They urged her to reconsider, citing the security of her thriving franchises. However, Harrington had other plans, and she was determined to pursue her newfound passion.

In 1996, Harrington took a bold leap, selling her McDonald's franchises to establish the Tennessee Bun Company. Her bakery would supply hamburger buns to various McDonald's franchises.

As the business took its initial steps, sales stumbled, and self-doubt crept in. Harrington vividly remembers those daunting days, saying, "I thought I would watch myself slowly go bankrupt. But by then I was so far into it. I had sold the restaurants and taken on tremendous debt, so I had to make it work."

Nearly three decades later, it's clear that her gamble paid off in more ways than one. Cordia Harrington, affectionately known as "The Bun Lady," has amassed a net worth of $180 million.

Harrington's remarkable journey serves as an inspiration to aspiring entrepreneurs, especially those who may be hesitant due to their age or circumstances. She highlights the powerful notion that age is just a number and that what truly matters is the energy and determination one brings to their pursuits.

JALAPEÑO POPPERS TO TRY

You Will Need:

1 tablespoon olive oil or baking spray

1 cup shredded Parmesan cheese

8 ounces cream cheese, room temperature

4 pieces cooked thick-cut bacon, crumbled

2 tablespoons chopped fresh chives

2 cloves garlic, minced

½ teaspoon kosher salt

¼ teaspoon freshly cracked black pepper

10 jalapeños, halved and seeded

2 tablespoons salted butter, melted

1 cup panko breadcrumbs

Directions:

1. Preheat oven to 350° Lightly grease a baking sheet and set aside.

2. In a small bowl, combine the parmesan cheese, cream cheese, crumbled bacon, chives, garlic, salt, and pepper.

3. Using kitchen gloves or a plastic grocery sack to protect your hands, halve each jalapeño lengthwise. Remove seeds and membranes using a paring knife. Spoon cheese mixture evenly into each jalapeño half.

4. Melt butter and pour over panko. Toss to coat. Sprinkle evenly over each popper. Place the peppers, cut side up, on a baking sheet and bake on the bottom rack until the cheese has melted, jalapeños have softened and panko is golden brown. About 30 minutes.

5. Remove from the oven and serve immediately.
