November 20, 1918: Corita Kent was born.

Corita Kent (Sister Mary Corita), artist, entered Immaculate Heart of Mary congregation in 1936, her popular prints featured peace themes and silk-screening techniques with bright primary colors, left religious order in 1967, continued peace work with Physicians for Social Responsibility.

AIR FRYER EGGPLANT

šŸ‘ Live Well Now Approved | Low Calorie | Vegetarian

You Will Need:

1/2 cup water (or orange juice)

1 gre1 medium Eggplant (sliced)

2 tbsp Olive oil

1 tsp Sea salt

1/2 tsp Black pepper

1 cup Grated parmesan cheese

2 tsp Italian seasoning

Directions:

1. Preheat the air fryer to 375 degrees F (190 degrees C).

2. Slice the eggplant crosswise to make circles, about 1/2 inch (1.25 cm) thick. Cut off the leafy end only after you are done slicing, so that you'll have more to grab onto as you slice. Pat the slices dry with paper towels.

3. Drizzle or brush the eggplant slices with olive oil. Sprinkle with sea salt, black pepper, Parmesan cheese, and Italian seasoning.

4. Arrange eggplant slices in a single layer in the air fryer basket. Cook for 10-12 minutes, until the eggplant is soft and the cheese is golden brown. Repeat in batches with remaining eggplant slices.
