Dolores Huerta, Chicana activist, labor organizer, and co-founder of the United Farm Workers union.

Asma Khan: From Academia to Culinary Success

At 49, Asma Khan has achieved her lifelong dream of becoming a successful chef and restaurateur. Known as the owner of London's renowned Indian Restaurant, Darjeeling Express, and a featured personality on Netflix's Chef's Table, Khan's journey to culinary stardom has been remarkable.

After earning a PhD in British Constitutional Law from King's College London, Khan boldly decided to pivot her career towards the culinary arts. Despite having attained academic success, her passion for cooking and sharing Indian cuisine with the world proved irresistible.

Khan's dedication and talent have not gone unnoticed. She has been honored with prestigious awards such as 'Female Entrepreneur of the Year' at the Asian Restaurant Awards and 'Entrepreneur of the Year' in the Asian Women of the Year Awards. Additionally, her debut cookbook, "Asma's Indian Kitchen," published by Pavilion, has been met with widespread acclaim, further solidifying her status as a culinary authority.

Despite her many achievements, Khan shows no signs of slowing down. With her cookbook already making waves and her restaurant continuing to thrive, she remains committed to pushing boundaries and sharing her love for Indian cuisine with audiences worldwide. Asma Khan's story highlights the value of pursuing one's passions, regardless of age or background, and serves as an inspiration to aspiring chefs and entrepreneurs everywhere.

AIR FRYER MEATBALLS

👍 Live Well Now Approved

You Will Need:

16 ounces lean ground beef

4 ounces ground pork

½ cup grated Parmesan cheese

⅓ cup Italian seasoned bread crumbs

1 egg

2 cloves garlic, minced

1 teaspoon Italian seasoning

½ teaspoon salt

Directions:

1. Preheat an air fryer to 350 degrees F (175 degrees C).

2. Combine beef, pork, Parmesan cheese, bread crumbs, egg, garlic, Italian seasoning, and salt in a large bowl. Mix until evenly combined.

3. Form into 16 equal meatballs (a small ice cream scoop is helpful) and place on a baking sheet.

4. Place 1/2 of the meatballs in the basket of the air fryer and cook 8 minutes. Shake the basket and cook 2 minutes more. Transfer to a serving plate and let rest for 5 minutes. Repeat with remaining meatballs.

5. Serve warm and enjoy!
