ADDICTIVE ASIAN CUCUMBER SALAD

👍 Live Well Now Approved | Simple To Prepare | Vegetarian | Vegan

You Will Need:

2 tablespoons freshly squeezed lime juice

2 tablespoons toasted sesame seed oil

1 teaspoons freshly minced or grated ginger , or to taste

1 tablespoon honey (use maple syrup for vegan)

salt

1 English cucumber (or 5-6 baby cucumbers); sliced

1/4 cup fresh mint leaves , finely chopped

3 green onions , chopped

1 tablespoon sesame seeds , for serving

Directions:

1. In a large bowl, whisk together the lime juice, sesame oil, ginger, honey and ½ teaspoon salt.

2. Add in the cucumbers, mint, and green onions, and toss gently to coat. Taste and adjust the seasoning as needed

3. Sprinkle sesame seeds over the top and serve right away. This salad will become watery when stored in the fridge, so I recommend storing the cucumbers and dressing separately if you need to store it for more than a few hours. The sliced cucumbers should last for up to 3 days in the fridge before getting soggy.

3 Steps to Reclaim Your Center

This week, we've been immersed in the incredible journeys of women breaking barriers and living their best lives in their 40s, 50s, and beyond.

Today, let's shift gears and explore three simple steps that bring the focus back to the most important person—you.

It is very common for us, women, to prioritize everything else and put ourselves on the back-burner. Today’s quick article is your reminder, that you can not take care of others, without taking care of yourself first.

1. Remind Yourself That You Are Important:

It's a familiar scenario: we juggle countless responsibilities and put ourselves on the back burner. But remember, you can't pour from an empty cup. Just like the oxygen masks on an airplane, you must secure yours before assisting others. Self-care isn't selfish; it's a necessity. Take moments to recharge, whether it's a quiet cup of tea, a walk in nature, or simply breathing deeply. By nurturing your well-being, you'll have even more to give to those you love.

2. Set Boundaries:

In the beautiful tapestry of life, boundaries are the threads that define our space. Learn to say "no" when necessary, and don't overextend yourself. Imagine your time and energy as precious —reserve them for what truly matters. Setting boundaries isn't a sign of weakness; it's a sign of self-respect and a declaration that your needs are important.

3. Celebrate Small Victories:

Amid life's hustle and bustle, it's easy to overlook the small wins and we tend to be incredibly hard on ourselves. Take a moment today and celebrate a small victory - it can be as simple as celebrating a 15 minute walk that you took to clear your head.

I hope you will embrace these 3 steps and prioritize yourself a bit more this weekend. Shoot me an email and let me know what changes you have made!

Until Monday,

Have a wonderful weekend!
